9.00am – 10.00am: Registration 10.00am – 10.30am: Dominic Allport, insights director at The NPD Group, examines current key trends and opportunities in the UK out-of-home food and beverage market – and how the UK compares with other developed markets.

10.30am-11.00am: Antony Hunt, managing consultant in innovation at CACI, provides a review of the food and beverage sector and what it takes to deliver the right proposition, to the right customers, in the right location to make a profit.

11.00am-11.30am: Ted Kennedy, owner of Pebble Hotels and veteran operator of pub assets, sets out ten key lessons learned as an operator and how these have been applied to making Alan Yau’s Duck and Rice concept profitable.

11.30am-12.00pm: Tim Hall, who founded Pod, talks about the creation, development and launch of sourdough pizza concept Three Joes, the challenges and pitfalls of finding funding, and the company’s success on crowdfunding platform Crowdcube.

12.00pm-1.00pm: Lunch 1.00pm-1.30pm: Making progress in a challenging market: Mos Shamel, chief executive of Las Iguanas for more than 15 years, talks about moving forward in a difficult market, maintaining and strengthening company culture (and margins), and evolving to maintain the brand’s strength.

1.30pm-2.00pm: Elton Mouna, managing director of Remarkable Pubs, talks about creating a positive culture, how ever changing and never-changing are perfect bedfellows, and applying the “seven principles” of marketing to the business.

2.00pm-2.30pm: What UK foodservice can learn from elsewhere in the world: James Hacon, founder of Think Hospitality, gives his views on outstanding foodservice offers around the world based on his travels to 21 countries in the past year, including Bahrain, Denmark, Dubai, Israel, New Zealand, Saudi Arabia and Thailand.

2.30pm-3.00pm: Mario C Bauer, AmRest brand ambassador, Curtice Brothers co-founder and WhiteSpace partner, gives his do’s and don’ts of franchising internationally.

3.00pm-3.30pm: Coffee break

3.30pm-4.00pm: Comedy in the experiential leisure era: Mark Tughan, founder of the UK’s largest comedy club brand The Glee Club, which is in its 25th anniversary year, talks about the evolution of comedy clubs, fusing comedy, music and special events, and his epic six-year court battle with 20th Century Fox over rights to the Glee Club name.

4.00pm-4.30pm: Matt Farrell, founder of Graffiti Spirits and star of My Million Pound Menu, talks about his bar and restaurant concepts such as El Bandito, Slims Porkchop Express, 81 and Santa Chupitos in Liverpool and the opening of three-storey, 500- capacity Duke Street Food and Drink Market.

4.30pm-5.00pm: Daniel Spinath, founder of Crepeaffaire, talks about the genesis, development and potential of his brand, backing from the BGF, airport locations, and franchising the brand.
